Cherry is an important crop in the Jaur valley. The farms are mostly family run.
The two main varieties are used to make white cherry fruits in syrup and jam, and the red cherry are distribued on French markets.
This delicious fruit is celebrated each year (1st Sunday in June) in Mons-La Trivalle when the CHERRY FESTIVAL takes place

500 g of cherries
75 caster sugar
3 tablespoons vanilla sugar
3 tablespoons honey
1 teaspoon brown sugar
2 whole eggs and yolks 2
1 teaspoon cinnamon
2 tablespoons Kirsch
Preheat oven to 180 °.
Wash, remove the stalks and Pit the cherries.
Put in a lightly buttered baking dish.
Mix togever with the honey, eggs, kirsch, cinnamon and sugar.
Cover cherries with this mixture and bake about 25 minutes. Remove the dish from the oven, sprinkle with brown sugar and vanilla sugar to caramelize and put it back in the oven.
